Casa Panchita’s Legendary Food
Casa Panchita’s Talavera-tiled kitchen is the domain of Doña Panchita, an extraordinary cook who excels at typical Oaxacan and Mexican dishes. Panchita’s healthy, generous meals, served family style in the dining room, introduce visitors to the culinary richness of traditional Oaxacan kitchens.
Panchita creates three meals a day, all prepared with fresh ingredients and purified water, offering guests a choice of full board or bed and breakfast.

Coffee service begins at 7:30 am.
Breakfast, served from 8 am to 9:30 am, brings platters of fresh fruit, fresh squeezed orange juice, local breads, and a choice of eggs in a variety of styles including huevos rancheros. Oatmeal or granola may also be requested. -Included in room rate.
Comida, the main meal of the day, is served at 2:30 p.m. A typical comida begins with salad or appetizer. A buffet follows with an assortment of vegetables and an entrée, which might be chicken in salsa verde, or one of Oaxaca’s seven renowned moles, fresh fish, or other traditional, home-style Oaxacan foods. Dessert and coffee or tea are included. -$23 per person
Cena, or supper, is a light meal served at 7:30 pm. Typically, Doña Panchita prepares a delicious soup which starts with the rich chicken stock slow-simmered in her kitchen. Soups vary daily offering a delightful sampling of Panchita’s vast collection of personal recipes. Platters of fresh fruit, bread and cheese round out the meal. -$12 per person.
Beverages: An honor bar on the terrace provides cold soft drinks and beer. Guests who would like to sample Alejandro’s margaritas in the afternoon or evening need only place a request earlier in the day.
